Double Peppermint Crunch Cookies

Here is my third Christmas cookie some of you know I've been lacking my holiday spirit its hard not having my husband here for it all during deployment even though he is a Grinch about it lol. I found this recipe on Pillsbury.com they use the sugar cookie roll of course I do not use that they have a peppermint sugar cookie one out. When I was at the store I found Wilton candy cane colorburst candy melts I love them to dip the cookies in! 



Sugar cookies:

  • 2 3/4 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 cup butter, softened
  • 1 1/2 cups white sugar
  • 1 egg
  • 1 teaspoon organic vanilla extract
  • peppermints or candy canes, crushed
  • white chocolate candy melts or candy cane melts



  1. Preheat oven to 375 degrees F . In a small bowl, stir together flour, baking soda, and baking powder. Set aside
  2. In a large bowl, cream together the butter and sugar until smooth. Beat in egg and vanilla. Gradually blend in the dry ingredients. Roll rounded teaspoonfuls of dough into balls, and place onto ungreased cookie sheets.
  3. Bake 8 to 10 minutes in the preheated oven, or until golden. Let stand on cookie sheet two minutes before removing to cool on wire racks.
4.     Dip half of each cookie into melted mixture, allowing excess to drip off; place on waxed or cooking parchment paper-lined cookie sheets. Sprinkle each with slightly less than 1/2 teaspoon crushed candy. stick into the fridge to harden.

Peanut Butter Reindeer Cookies

Ah these came out so cute i saw them on the Betty Crocker website looking through the holiday cookie section they always have the best ideas! They are really easy to make when i was making them i figured out a way to kind of shape the face with my thumbs out of the cookie ball. 



1/2 cup natural PB 
1/2 cup butter
1/2 sugar
1/2 cup brown sugar packed
1 egg
1 1/3 all purpose flour
1 teaspoon baking powder
Pretzel twists
chocolate chips (i used dark chocolate)
candies for nose (i used icing)



Preheat oven to 350 in large bowl, beat PB,butter,sugar and brown sugar with mixer until fluffy. Beat in egg. Stir in flour and baking powder.

For each cookie shape 1 inch ball of dough into a triangle shape on cookie sheet. Push two pretzels into cookie to look like antlers. Bake for 5 to 10 mins  or until browned on the edges. Immediately press 2 chocolate chips for eyes and a candy nose or icing nose like i did. let stand for 2 mins to cool.

Peppermint Crunch Cookies

Here they are the 1st Christmas cookies of the year! i love peppermint anything i love the taste and the smell chocolate and peppermint are the best combo with little crunchy candy cane bits inside. 

1/2 cup + 2 Tablespoons butter
1 cup sugar
1 egg
1 teaspoon vanilla
1/4 cup + 2 Tablespoons cocoa powder 
3/4 whole wheat flour
1/2 cup all purpose flour
1/2 teaspoon baking soda
1/8 teaspoon salt
12-14 candy cane kisses
4 crushed candy canes 



Preheat oven to 350°F and line baking sheet with parchment paper in a bowl mix butter and sugar till fluffy. add egg and vanilla mix well with mixer. In second bowl add flours,cocoa powder,baking soda and salt stir and add to the wet mix, mix well with hand mixer till smooth. Roll dough into 1 1/2 inch balls. Then roll into crushed candy cane roll between palms to press candy into the cookie ball. Bake for 10 mins remove from oven and immediately press a candy cane kiss in the middle.

Thanksgiving Turkey Cookies

So i decided to make a Thanksgiving cookie before i start doing any Christmas recipes this year will be the 1st time in 26 years I'm not having a Thanksgiving bc of deployment its going to be just another day! the last two thanksgivings I've done myself i love doing it! I hope everyone enjoys these fun cookies i did have a little trouble doing the little feet as you can probably tell lol!



Chocolate icing
Black decorating icing
Candy corn
Mini chocolate candy coated baking bits 


Sugar cookies:

how to assemble: 

Spoon chocolate frosting into piping bag. On each cookie, pipe frosting on outer edge of half of cookie. Arrange candy corn over frosting for feathers.Pipe orange icing onto each cookie to resemble turkey face and feet. Use orange icing to attach baking bits to turkey face for eyes. Pipe black gel on baking bits for centers of eyes.

Chocolate Darth Vader Cookies

All i can think of when i see these cookie is "come to the dark side we have cookies"lol these remind me fudgy chocolate cookies, i thought they would turn out more wafer thin and crispy. i love the way the came out i did have to buy some black gel colouring icing online i couldn't find it at the store at all what is the world coming to? its Halloween time! now that i have done Yoda,Stormtroopers, and Darth Vader cookies i have one more left... Boba Fett i still don't have a idea for that yet. 

2 1/2 cup all-purpose flour
1/2 cup dutch-process cocoa 

1/2 tsp salt1 cup unsalted butter
1 cup sugar
1 egg
1 tsp. vanilla
black gel food colouring (i used a whole tube)


Preheat oven to 350. Line baking sheets with parchment paper.

Whisk together the flour,cocoa, and salt; set aside.

Cream together the butter and sugar until light an fluffy. Beat in the egg and vanilla until well combined.

 Add the flour mixture at low speed. 

Work in food colouring with your hands to desired darkness. Refrigerate dough for 30 minutes.

Roll the dough on a lightly floured and cocoa-ed surface. (the flour wont mess with the colour of the cookies)

Cut the cookies with Darth Vader cutter.

Freeze cut cookies 5 minutes.

Bake 9 mins.

Caramel Apple Pie Cookies



Yes i admit i love anything that has to do with caramel apples you will be seeing more recipes that have caramel apple in them. this is cinnamon spiced cookie with chocolate chips and apples in them drizzled with some caramel on top! I'm so glad i have willpower not to eat all of them. we only have 28 days till Halloween!

  • 2 1/4 cups all-purpose flour
  • 1 1/2 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup (2 sticks) butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups Mini semi-sweet chocolate chips
  • 1 1/2 cups  coarsely chopped dried apples
  • 18 caramels, unwrapped
  • 1 tablespoon milk

Preheat oven to 375° F.

COMBINE flour, cinnamon, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in morsels and apple pieces. Drop by rounded tablespoon onto ungreased baking sheets.

Bake for 9 to 11 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

Microwave caramels and milk in small, in a bowl for 30 seconds; stir. Microwave at additional 10- to 20-second intervals; stir until smooth. Place sheets of wax or parchment paper under wire racks. Drizzle melted caramels over cookies. Allow drizzle to set.

Pumpkin Spice Cookies

Here's my first Halloween recipe of the year! Halloween is by far my favourite holiday i love everything about it the smells,the food,cool weather,dark colours,the cozy clothes i could go on. I used my carrot cake recipe for the cookies but if you are in hurry and not into making your own you can also buy a box of carrot cake at the store same goes with the icing. I will be doing more Halloween recipes for the next 5 weeks I've noticed i didn't do much last year at all! 




( 1 cookie)Calories 160,Carbs 27,Fat 2,Sugar 19,protein 1 (WW points 3 WW plus points 4)

 For the cookies

1-3/4 cups all-purpose flour
1 teaspoon baking soda
2 teaspoons baking powder
2 teaspoons cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
1-1/2 cups brown sugar, firmly packed
3/4 cup pumpkin puree
3 eggs
1 cup raisins, soaked in water for 15 minutes, and drained
1 cup (about 2 large) finely grated carrots 

Preheat oven to 350 F.

In a large mixing bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Set aside.

In a smaller bowl, beat brown sugar, pumpkin puree, and eggs until well-combined.

Add egg mixture to flour mixture and mix well. Stir in, raisins, and carrots. Mix until evenly distributed.

drop dough by rounded tablespoons on baking sheet bake for 11-14 mins or until puffed in the middle.


Cream Cheese Icing-

8 ounces cream cheese, at room temperature
1 cup confectioners' sugar
1 teaspoon pure vanilla extract

Beat cream cheese and confectioners' sugar until smooth. Spread on cooled cake. Sprinkle with 1/2 cup walnuts and press gently into frosting.
Using piping bag or Ziploc bag pipe icing into cooled cookies then stick a little candy corn pumpkin on top. or you can use Halloween themed Kisses they didn't have any at the store or i would of used those!




I found this cute platter at goodwill this summer i knew i would use it at some point! i love it!
