Pineapple Salsa



i made this today for a little snack. i got the idea from a salsa i use to buy when we didn't make our own from Newman's own i loved it! but now my taste has changed it just doesn't taste right at all. my husband and i are huge salsa connoisseurs also guacamole too lol it has to be made fresh and just right. i like mine really spicy too. a


45 calories per cup


  • 2 cups diced pineapple, drained
  • 1 teaspoon minced jalapeno (about 1/4 pepper-add to 1/2 pepper if more heat is desired)
  • 3/4 cup diced red bell pepper
  • 1/4 cup finely chopped red onion
  • 4 teaspoons freshly squeezed line
  • pinch potassium salt
  • 2 tablespoons roughly chopped fresh parsley
  • 1 cup tomato diced

Black Bean and Sweet Potato Enchiladas

I know this sounds a little weird but it is very good and low in calories if you use low calorie torts like la factory tortillas i love them only 100 cals! i know the pumpkin pie spice sounds weird too but i didn't even taste it and it goes well with the sweet potatoes too.

Calories per serving- 170 carbs-39 Fat-14 protein-69

3 can enchilada sauce (i used Hot)
1 teaspoon cumin
1 teaspoon pumpkin pie spice
1 can black beans drained and rinsed
1 can tomatoes with basil and oregano
8 tortillas (i use la factory tortillas)
2 sweet potatoes (you can also use canned)
reduced fat Mexican cheese (optional) i did not have any on hand


  1. preheat oven to 350F. in a microwave safe bowl,stir together enchilada sauce,cumin and pumpkin pie spice. cover and microwave for 90 seconds. remove divide 1/2 a cup and spread on the bottom of a baking pan;set aside. pour 1 1/2 cups of enchilada sauce mixture into pie plate; set aside.
  2. in a medium, combine black beans and tomatoes.
  3. to assemble each enchilada, dip a tort into enchilada sauce mixture in pie plate, place on cutting board. place 1/3 cup of the black bean mixture,2 tablespoons of the sweet potatoes in the center of tort. roll tightly seam side up in baking pan. repeat cover loosely with foil.
  4. bake enchiladas in oven for 40 to 45 mins top with cheese last 10 mins of baking (optional)
  5. meanwhile place remaining 1 1/2 cups of the enchilada sauce in microwave bowl. cover for 2 mins serve with enchiladas.

Zucchini Pizzas

Today i saw a recipe for zucchini chips online but i couldn't find the source of the photo anywhere! of course i looked up how to make them a lot of them seem to be dipped in egg and battered i didn't feel like having that so i decided to make these little pizzas! of course low calorie too which is always a good thing!

  • 1 medium zucchini (cut into thick slices)
  • canola oil spray
  • 2 tbsp marinara sauce 
  • mozzarella cheese
  • salt and pepper
i had a black bean burger for dinner 




Cut zucchini about 1/4 inch thick. 


Spray both side lightly with oil and 
season with salt and pepper. 


Broil on low for about 2 minute on each side. 


Top with sauce and cheese and
 broil for an additional minute or two.

Strawberry-Banana Pineapple Smoothie

Today i made this smoothie up after i had my upper arms workout. it looks like a strawberry daiquiri in the cup i put it in lol.  nice and refreshing after a hard workout also and a hot day like today here in Kansas we have a heat warning its suppose to get up to 103! 

1 cup fresh orange juice or other fresh fruit juice
frozen pineapple chunks ( or use fresh pineapple)
Organic frozen strawberries (fresh or whole frozen, non-sweetened berries)
frozen banana chunks
little bit of honey
1 teaspoon of flaxseed (optional)

add all to blender and blend till smooth. if its too thick you can add water or OJ.

Jedi Juice Pops

i made these the other day from the star wars cookbook of course they are easily made with a dixie cup and sticks. i find these are the easiest way next to Popsicle molds which annoy me. thinkgeek has fake lightsaber pop molds they use for a April fools joke. when you go to buy them it says April fools lol. i would totally buy them if they were real of course.

any fresh fruit or frozen (such as strawberries,bananas,oranges or grapes cut into chunks.)
fruit juice such as cranberry,apple,lemonade,or orange juice. (i used OJ)



1. put fruit on the bottom of pop molds or paper cups
for the paper cups i put foil over the top and put the stick through so it would stay in while freezing. or you can wait to push them in the cups.
2. freeze for 2 hours or more.
