Buffalo Chicken Stuffed Peppers

on our last food shopping trip i found of bag of peppers reduced for 1.94 there was about 7 in the bag! Score! so we got them! we pretty much have a bunch of chicken still and i have tons of recipes in mind for chicken! i came up with this last min. i was going to just put chicken in the peppers with some laughing cow cheese.


1/2 cup uncooked white rice
3 large red or green peppers, tops removed and seeded
2 chicken breasts
1/2 cup dices onion
1/2 cup chopped celery
1 cup red hot sauce
1/4 teaspoon garlic powder
1 tablespoon dried italian seasoning
2 teaspoons dried parsley
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 cup crumbled blue cheese
3 2% pepper jack cheese slices


Pre-heat the oven to 350 degrees.

Heat a large pot of water (not completely filled) and boil. Add chicken and boil for about 20 minutes or until the chicken is completely cooked. Shred the chicken (or you can cut into chunks and put through your food processor). Put aside.

Cook the rice as per package directions.

 saute onion and the celery in a sauté pan over medium heat. Drain. Add the remaining ingredients (except the blue cheese and pepper jack cheese) and simmer for about 10 minutes.

Add blue cheese into the meat mixture. Taste the mixture and if you prefer a stronger blue cheese flavor, add in more blue cheese.

Place green peppers on baking sheet.

Top each pepper with the pepper jack cheese.

Bake the peppers covered with foil for 45 minutes. (keep the foil from touching the cheese or it will pull the cheese right off.) Bake the pepper uncovered for approximately 15 minutes or until peppers are soft.

Greedo's Burritos


this recipe is from the star wars cookbook i got a long time ago in a galaxy far far away lol. anyways i use to make this all the time before i even met my husband. my husband and i love star wars and any mexican food.
this cookbook has some awesome recipes! 

1 can black beans
1 cup grated cheese
shredded lettuce
1 tomato
1 tablespoon olive or vegetable oil
1 1/2 pound ground beef
flour torts
1/2 cup black olives

preheat oven to 350
open can of beans and drain the liquid into the sink.set aside.
put the oil in the skillet brown the beef on medium heat
wrap torts in foil put into oven for 5 to 10 mins
add the beans to the meat stirring until beans are heated through
take torts out of oven
put all of your toppings on the tort. we also put on guac and sour cream.

Artichoke and Lemon Pasta Sauce

ok so i was browsing the williams and sonoma website finding all kinds of wonderful things! i was looking at the sauces and found artichoke and lemon pasta sauce there is noway i'm paying 15 buck plus 5 for shipping for something i can make myself! so i did and this came out! we loved it! my husband loves anything with artichokes so i knew he would love it.





1/2 cup olive oil
1/2 cup butter
2 tablespoons flour
2 cups chicken broth
2 cloves minced garlic
2 cans artichoke hearts, drained and chopped
1/4 cup lemon juice
1/4 cup fresh Parmesan cheese
2 teaspoons lemon pepper
1 teaspoon parsley






Cook oil, butter, flour and chicken broth until it thickens.
Add garlic, artichoke hearts (chopped), lemon juice and cheese.
Continue cooking until flavors blend, about 5 minutes.
Add capers and parsley. and just add it to any pasta you like. i also put olives on top and lemon pepper.
